Betty went vegan in January 2018, after she'd reached her limit handling raw chicken. She bought some vegan cookbooks and realized it was fun cooking new vegan meals … until it wasn't! She pored over vegan web sites, steamed homemade seitan, roasted bushels of veggies, blitzed countless cashews in the blender, discovered that most vegan cheeses taste weird and do NOT melt, obsessed about vitamin B12 and complete proteins and "eating the rainbow."
Betty's favorite food is butter. After being disappointed by some store bought vegan "spreads," she adapted Miyoko Schinner's butter recipe into a tasty, spreadable dream come true.
